Taco Shells and Fillings
  • 10 pieces taco shells Use crispy taco shells
  • 6 large eggs Fresh eggs for scrambling
  • 1 cup cooked halal ground beef or chicken sausage, crumbled For a hearty filling
  • 1 cup shredded cheese Cheddar or your choice
Toppings
  • 1 medium tomato, chopped Freshly chopped for garnish
  • ½ cup sour cream For creaminess
  • 1 cup salsa Choose your favorite kind
  • 1 piece avocado, sliced Ripe avocado adds flavor
  • 2 pieces green onions, chopped For a fresh finish
Egg Seasonings
  • 1 tablespoon olive oil For cooking eggs

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the eggs with salt, pepper, and any additional seasonings.
  3. In a skillet over medium heat, add olive oil and pour in the egg mixture. Stir gently until the eggs are fully cooked but still creamy, about 3–4 minutes.
  4. Place the taco shells upright in a baking dish. If needed, secure them with crumpled foil.
  5. Fill each taco with a layer of scrambled eggs, followed by cooked ground beef or chicken sausage, and top with shredded cheese.
Baking
  1. Place the baking dish in the oven and bake for about 10–12 minutes, or until the cheese is melted and the taco shells are golden and crispy.
Serving
  1. Once out of the oven, let the tacos cool for a minute. Add chopped tomatoes, sour cream, salsa, avocado, and green onions to each taco.

Notes

You can refrigerate leftovers for up to 3 days. When reheating, pop them in the oven at 350°F for about 10 minutes to keep them crispy. Feel free to customize the filling ingredients as desired.
