Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, add the ground beef and cook until browned and fully cooked through, about 5-7 minutes.
- Drain off any excess fat and add the taco seasoning to the beef along with 1/4 cup of water. Stir and let it simmer for 3-4 minutes.
- In a large bowl, mix the seasoned beef, drained black beans, drained corn, and salsa until everything is well combined.
- In a 9x13 baking dish, spread half of the tortilla chips evenly across the bottom. Top with half of the beef mixture and sprinkle half of the cheese. Repeat the layers until all ingredients are used, finishing with cheese on top.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
- Allow the casserole to cool for a few minutes before serving. Enjoy it with your favorite toppings!
Notes
For meat substitutes, ground turkey can be used. Feel free to add more vegetables like diced bell peppers or onions for extra flavor. To avoid burning cheese, keep an eye on it during the last few minutes of baking.
