- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper for easy removal.
- Prepare the sweet potatoes: Peel, chop, and boil your sweet potatoes until tender. Drain and mash them until smooth.
- In a large mixing bowl, combine the mashed sweet potatoes with maple syrup, melted coconut oil, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
- Gradually fold the dry ingredients into the sweet potato mixture, ensuring everything is mixed well. If using chocolate chips, fold them in as well.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool slightly before slicing into squares.
