  • 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 cup almond flour Can substitute with other nut flours.
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted Can be replaced with other vegetable oils.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper for easy removal.
  2. Prepare the sweet potatoes: Peel, chop, and boil your sweet potatoes until tender. Drain and mash them until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes with maple syrup, melted coconut oil, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the almond flour, cocoa powder, baking powder, and salt.
  5. Gradually fold the dry ingredients into the sweet potato mixture, ensuring everything is mixed well. If using chocolate chips, fold them in as well.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool slightly before slicing into squares.
  8. Enjoy these delicious brownies warm or at room temperature!

Notes

Store in an airtight container for 3-5 days in the refrigerator or freeze for up to 3 months. Thaw in the refrigerator or use the microwave to reheat gently.
