  • 1 pound shrimp (peeled and deveined) Fresh is best for flavor.
  • 8 pieces corn tostadas Crispy base for toppings.
  • 2 pieces ripe avocados For guacamole.
  • 1 cup fresh tomatoes (diced) For fresh salsa.
  • 1 small red onion (finely chopped) Adds flavor to salsa.
  • 1 piece jalapeño (seeded and diced) Adjust spiciness to preference.
  • 2 pieces limes (juiced) Juice for seasoning.

  • to taste fresh cilantro For garnish.

Method
 

Preparation
  1. In a skillet over medium heat, add a splash of olive oil.
  2. Toss in the shrimp, seasoning them with salt, pepper, and a squeeze of lime juice. Cook for about 3-4 minutes until they turn pink and opaque. Remove from heat.
  3. While the shrimp is cooking, mash the ripe avocados in a bowl. Add salt, pepper, and lime juice to taste. Mix until you achieve your preferred creaminess.
  4. In a separate bowl, combine diced tomatoes, red onion, jalapeño, and a pinch of salt. Finish with a squeeze of lime juice. Mix well to combine the flavors.
Assembly
  1. With all components ready, begin layering! Start with a corn tostada, add a generous spoonful of guacamole, top it with shrimp, and finish with fresh salsa and a sprinkle of cilantro.
