Ingredients
  

For the Steak
  • 1 pound flank steak or sirloin
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
For the Tacos
  • Corn tortillas Quantity depends on serving size
For the Street Corn Topping
  • 1 cup corn (fresh or frozen)
  • 1/4 cup mayonnaise
  • 1/4 cup Cotija cheese (or feta as a substitute)
  • 1 lime juiced
  • Fresh cilantro for garnish

Method
 

Marinate the Steak
  1. In a bowl, mix together olive oil, minced garlic, chili powder, cumin, salt, and pepper. Add the steak and let it marinate for at least 15 minutes.
Make the Street Corn Topping
  1. In another bowl, combine corn, mayonnaise, lime juice, and Cotija cheese. Mix well and set aside.
Grill the Steak
  1. Preheat your grill to medium-high heat. Grill the steak for about 4-5 minutes on each side for medium doneness. Adjust the time based on your preference.
Prep the Tortillas
  1. Warm the corn tortillas on the grill for about 1 minute on each side, just until they are pliable.
Assemble the Tacos
  1. Slice the grilled steak thinly against the grain. Fill each tortilla with sliced steak and top generously with the street corn mixture.
Garnish and Serve
  1. Sprinkle with fresh cilantro and enjoy!

Notes

Let the steak rest after grilling for about 5 minutes before slicing to keep the juices sealed in. You can add diced jalapeƱos to the street corn mixture for a kick.
