  • 4 cups mixed greens Ensure greens are fresh.
  • 1 cup strawberries, sliced Use fresh and ripe strawberries.
  • 1/2 cup sliced almonds Optional: Toast for added crunch.
  • 1/4 cup crumbled feta cheese Can substitute with goat cheese for variation.
  • 1/4 cup balsamic vinaigrette Use just before serving.

Method
 

Preparation
  1. Wash the mixed greens thoroughly under cool running water and pat dry.
  2. Remove the green tops from the strawberries and slice them thinly.
  3. Optional: Toast the sliced almonds in a small pan over medium heat for 3-5 minutes until golden brown.
Assembly
  1. In a large bowl, combine the mixed greens, sliced strawberries, and sliced almonds. Gently toss together.
  2. Sprinkle crumbled feta over the salad and drizzle with balsamic vinaigrette. Season with salt and pepper to taste.
  3. Toss the salad gently once more to incorporate the dressing and cheese. Serve immediately.

Notes

Store leftovers in the refrigerator for 1-2 days but keep dressing separate to maintain crispiness. Do not freeze.
