  • 1 cup cornmeal Make sure to use fresh cornmeal for the best flavor.
  • 1 teaspoon baking powder
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup milk You can use almond milk or any non-dairy milk for a lactose-free option.
  • 2 large eggs
  • ¼ cup unsalted butter, melted Melted butter adds richness to the bread.
  • 1 tablespoon granulated sugar Optional for slight sweetness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cornmeal, baking powder, and salt. Whisk until blended.
  3. In another bowl, mix together the milk, eggs, and melted butter. Stir in sugar if using.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix.
  5. Grease a baking dish (preferably an 8x8-inch square dish) and pour in the batter evenly.
Baking
  1. Place the dish in the preheated oven and bake for 20-25 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  2. Once baked, let it cool for a few minutes before serving.
  3. Serve warm with a spoon.

Notes

For a healthier option, try substituting half of the all-purpose flour with whole wheat flour. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for about 3 months. Reheat in the oven for 10-15 minutes or in the microwave for a quick option.
