  • 1 cup cottage cheese (low-fat or regular) Choose according to your taste preference.
  • 1 cup fresh spinach (chopped)
  • 1 egg egg (for egg wash) This is for adding a shiny finish.
Dry Ingredients
  • 1 ½ cups all-purpose flour Can substitute with whole wheat or gluten-free flour.
  • 1 tsp baking powder
  • ½ tsp garlic powder (optional) For added flavor.
  • ½ tsp salt

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cottage cheese and chopped spinach. Mix until they’re well incorporated.
  3. In another bowl, whisk together the flour, baking powder, garlic powder, and salt.
  4. Gradually add the dry ingredients to the cottage cheese and spinach mixture, stirring until a dough forms. You may need to use your hands to knead it gently.
  5. Divide the dough into 4 equal sections. Roll each section into a ball and then flatten into a bagel shape with a hole in the middle.
  6. Beat the egg and brush it over the bagels for a shiny finish.
  7. Place the shaped bagels on the prepared baking sheet and bake for 15-20 minutes, or until they turn golden brown.
  8. Allow the bagels to cool slightly before serving. Enjoy them warm or at room temperature.

Notes

Best served with fresh fruit, salad, or spreads like avocado or hummus. These bagels freeze well and can be reheated in the oven at 350°F (175°C) for about 10 minutes.
