Preparation
- If using fresh spinach, rinse it and chop it coarsely. If it’s frozen, thaw it, and squeeze out excess moisture.
- In a skillet, heat the olive oil over medium heat. Add the spinach, cooking for about 2-3 minutes until wilted. Season lightly with salt and pepper.
- While the spinach cooks, slice the bagels in half and toast them until golden and crispy.
Assembly
- Once toasted, spread a generous layer of cottage cheese on each half of the bagel. Top with sautéed spinach.
- Add optional toppings like sliced tomatoes or cucumbers, or even a sprinkle of feta cheese for an extra flavor kick!
Serving
- Enjoy immediately while warm!
Notes
Store leftover components separately in airtight containers in the refrigerator for up to 3 days. Reheat bagel halves in a toaster or oven, and add freshly cooked spinach and cottage cheese before serving.
