Bagel Components
  • 4 pieces bagels (any variety you prefer)
Spinach and Cheese Topping
  • 1.5 cups spinach (fresh or frozen) If using frozen, thaw and squeeze out excess moisture.
  • 1 cup cottage cheese
  • 1 tablespoon olive oil For sautéing the spinach.
  • Salt and pepper to taste
  • Optional toppings: sliced tomatoes, cucumbers, or a sprinkle of feta cheese.

Preparation
  1. If using fresh spinach, rinse it and chop it coarsely. If it’s frozen, thaw it, and squeeze out excess moisture.
  2. In a skillet, heat the olive oil over medium heat. Add the spinach, cooking for about 2-3 minutes until wilted. Season lightly with salt and pepper.
  3. While the spinach cooks, slice the bagels in half and toast them until golden and crispy.
Assembly
  1. Once toasted, spread a generous layer of cottage cheese on each half of the bagel. Top with sautéed spinach.
  2. Add optional toppings like sliced tomatoes or cucumbers, or even a sprinkle of feta cheese for an extra flavor kick!
Serving
  1. Enjoy immediately while warm!

Notes

Store leftover components separately in airtight containers in the refrigerator for up to 3 days. Reheat bagel halves in a toaster or oven, and add freshly cooked spinach and cottage cheese before serving.
