Preparation
  1. Start by washing your cucumbers under cold water. Slice them thinly with a knife, or if you have a mandoline, use that for even slices.
  2. In a mixing bowl, combine the red chili flakes, salt, vinegar, and minced garlic. Stir well until the salt is dissolved.
  3. Toss the sliced cucumbers into the bowl with the dressing. Make sure every piece is well-coated.
  4. Pour the sesame oil over the coated cucumbers and give everything another gentle toss.
  5. Finally, sprinkle the chopped green onions on top for an extra burst of flavor and color.
  6. Let the salad sit for about 5 minutes so the flavors can meld. Serve chilled, and enjoy!

Notes

For optimal flavor, let your cucumber salad marinate in the dressing for at least 15 minutes before serving. Avoid freezing this salad as cucumbers contain too much water and will turn mushy. Store in an airtight container and add dressing just before serving.
