  • 2-3 medium medium squash, sliced
  • 1 unit onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream Can substitute with Greek yogurt
  • 1 cup crushed crackers For topping
  • 3 unit eggs
  • Salt and pepper to taste
  • Butter for greasing

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish with butter.
  3. In a skillet over medium heat, sauté the chopped onion until translucent. Add the sliced squash and cook until tender but still slightly crisp, about 5-7 minutes.
  4. In a large bowl, combine the sautéed squash and onions with shredded cheddar cheese, sour cream, crushed crackers, and eggs. Season with salt and pepper.
  5. Pour the mixture into your greased baking dish, spreading it evenly.
  6. Top with extra crushed crackers and cheese if desired. Bake for about 30 minutes or until the top is golden brown and bubbly.
  7. Allow the casserole to cool for a few minutes before serving.

Notes

Consider using Greek yogurt instead of sour cream for a tangy flavor. Avoid overcooking the squash to maintain texture.
