Activation
  1. In a bowl, combine warm water, sugar, and yeast. Allow it to sit for about 5 minutes until frothy.
Dough Preparation
  1. In a large mixing bowl, combine flour and salt. Add the yeast mixture and stir until a dough forms.
  2. Sprinkle some flour on a clean surface. Knead the dough for about 5 minutes until it becomes smooth and elastic.
  3. Form the dough into a ball and place it in a greased bowl. Cover with a damp cloth and let it rise in a warm area for approximately 30 minutes, or until it doubles in size.
Cooking
  1. In a large pot, bring 4 cups of water to a gentle boil and add the baking soda.
  2. After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches), then shape it into a pretzel knot.
  3. Carefully drop each pretzel into the boiling baking soda bath for about 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
  4. Brush the tops with melted butter (if using) and sprinkle with coarse salt. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes, until golden brown.
  5. Allow your pretzels to cool on a wire rack before indulging in this hot, soft goodness.

Notes

Store any leftover pretzels in an airtight container at room temperature for up to 2 days. To keep them longer, consider freezing them tightly wrapped for up to 3 months. To reheat, place them in the oven at 350°F (175°C) for about 5-7 minutes until warmed through.
