Ingredients
  

Main Ingredients
  • 1 lb chicken breast, diced
  • 4 pieces carrots, sliced
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped
  • 2 cups chicken broth (Halal)
Seasoning
  • 1 tsp garlic powder
  • 1 tsp thyme (dried)
  • to taste salt and pepper

Method
 

Preparation
  1. Start by dicing the chicken into bite-sized pieces, peeling and slicing the carrots, and dicing the potatoes.
Layering
  1. In your slow cooker, layer the ingredients starting with the chicken at the bottom.
Adding Veggies
  1. Add the chopped onion, sliced carrots, and diced potatoes on top of the chicken.
Seasoning
  1. Sprinkle garlic powder, thyme, salt, and pepper over the veggies. Then pour the chicken broth evenly across the top.
Cooking
  1. Cover the slow cooker and set it on low for 6-8 hours, or high for 3-4 hours.
Serving
  1. Once cooked, give it a good stir and ladle the stew into bowls. Serve it warm with fresh herbs if desired.

Notes

This stew can be made in advance and actually tastes better the next day. You can adjust the cooking time for frozen chicken and feel free to add your favorite seasonal veggies.
