  • 1 pound kielbasa sausage, sliced into ¼-inch rounds
  • 2 cups baby potatoes, halved or quartered
  • 2 cups broccoli florets
  • 1 medium bell pepper, sliced (any color)
  • 1 medium red onion, sliced
Seasonings and Oil
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the baby potatoes, broccoli, bell pepper, and red onion.
  3. Drizzle the olive oil over the vegetables and sprinkle the garlic powder, smoked paprika, salt, and pepper. Toss until the veggies are well-coated.
  4. Add the sliced kielbasa to the bowl and mix everything together for even distribution.
  5. Transfer the mixture onto a large baking sheet in a single layer.
Cooking
  1. Roast in the oven for about 25-30 minutes, stirring halfway through until the vegetables are tender and slightly charred, and the sausage is nicely browned.
  2. Once done, pull it out of the oven, let it cool for a few minutes, and then serve hot!

Notes

For best results, avoid overcrowding the sheet pan to ensure even cooking and caramelization. Feel free to swap out vegetables based on preference or availability.
