Ingredients

  • 1 cup red lentils Rinse thoroughly before use.
  • 1/4 cup flaxseed meal Serves as a binding ingredient.
  • 1 cup water Adjust as necessary for batter consistency.
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Olive oil For cooking the wraps.

Method
 

Preparation
  1. Rinse the red lentils under cold water in a sieve until the water runs clear.
  2. In a high-speed blender or food processor, combine the rinsed lentils, flaxseed meal, water, salt, garlic powder, and onion powder. Blend until smooth.
Cooking
  1. Heat a non-stick skillet over medium heat and drizzle a little olive oil.
  2. Pour about 1/4 cup of the lentil batter into the skillet, spreading it into a round shape. Cook for 3-4 minutes until edges lift and the top is dry.
  3. Flip the wrap using a spatula and cook for an additional 2-3 minutes until both sides are brown and crispy.
  4. Repeat with remaining batter, adding more olive oil as necessary.
  5. Let cool slightly, fill with toppings, and enjoy.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze for up to one month if you want to enjoy them later.
