  • 1/2 cup heavy cream
  • 1/2 cup fresh raspberries Frozen berries can be used if fresh are out of season, just thaw and drain well.
  • 1 teaspoon vanilla extract Can substitute with flavored extracts like almond or hazelnut for variation.
  • Cocoa powder or crushed nuts For coating.

Preparation
  1. Chop the dark chocolate finely and place it in a heatproof bowl.
  2. In a small saucepan over medium heat, bring the heavy cream to a gentle simmer, avoiding boiling.
  3. Pour the simmering cream over the chopped chocolate and let it sit for a minute to soften, then stir until smooth.
  4. Gently fold in the fresh raspberries and vanilla extract into the chocolate mixture.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for about 2 hours, or until firm.
  6. Using a small scoop or your hands, roll a tablespoon of the mixture into balls.
  7. Roll each truffle in cocoa powder or crushed nuts to coat.
  8. Place the coated truffles on a baking sheet lined with parchment paper and chill until serving.

Notes

These truffles are best enjoyed fresh but can last in the refrigerator for up to a week in an airtight container. Freeze for up to three months, and thaw in the refrigerator before serving.
