Ingredients
  

Main Ingredients
  • 2 large eggs
  • 2 pieces corn tortillas
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup salsa your favorite kind
  • 1/4 cup cheese cheddar or queso fresco
  • to taste salt
  • to taste pepper
  • as needed tablespoon oil for frying such as olive or vegetable oil
  • to garnish fresh cilantro

Method
 

Preparation
  1. Gather and measure all your ingredients.
  2. In a non-stick skillet, add a splash of oil and heat over medium heat.
Cooking the Tortillas
  1. Once the oil is hot, add the corn tortillas one at a time, cooking for about 30 seconds on each side until crispy.
  2. Remove them and place on a plate lined with paper towels to absorb excess oil.
Cooking the Eggs
  1. In the same skillet, crack both eggs directly into the pan, season with salt and pepper, and let them cook until the whites are set but the yolks are still runny, about 2–3 minutes.
  2. For firmer yolks, cover the pan for a minute or cook longer.
Assembly
  1. On each tortilla, layer the black beans first, followed by the fried egg, salsa, and cheese.
  2. Sprinkle fresh cilantro on top.
Serving
  1. Bring to the table and serve warm.

Notes

If you don’t have black beans, substitute with pinto or chickpeas. For a creamy touch, replace cheese with avocado slices. Monitor eggs closely to achieve desired doneness.
