Preparation
  1. In a mixing bowl, whisk together the canned pumpkin, eggs, milk, cinnamon, nutmeg, and vanilla extract until smooth.
  2. Preheat a non-stick skillet or griddle over medium heat and add a generous amount of butter until it melts.
Cooking
  1. Dip each slice of bread into the pumpkin custard mixture, ensuring both sides are well coated.
  2. Cook the coated slices in the skillet for about 2-3 minutes on each side until golden brown and slightly crispy.
  3. Transfer the French toast to plates and drizzle with maple syrup. Add whipped cream or fresh fruit if desired.

Notes

If making dairy-free, substitute almond or oat milk. Avoid soaking the bread for too long to maintain texture. For storage, keep leftovers in an airtight container in the fridge for up to 3 days or freeze slices with parchment paper between layers.
