  • 2 large large potatoes (about 1 pound) Make sure to peel and boil until fork-tender.
  • 1 teaspoon salt
  • 1 cup all-purpose flour (plus extra for dusting) Adjust as needed based on potato moisture.
  • 1 large egg
  • 1/4 cup water Adjust as needed.

Preparation
  1. Begin by peeling and chopping the potatoes. Boil them in water until completely tender, usually around 15-20 minutes depending on the size of the pieces. Drain and let them cool.
  2. In a mixing bowl, mash the cooled potatoes until smooth.
  3. Add the salt, flour, egg, and water to the mashed potatoes. Mix until a soft dough forms. If the mixture is too sticky, sprinkle a bit more flour. Make sure not to overwork the dough.
  4. Lightly flour your work surface and divide the dough into manageable portions. Roll each piece into a log about 1-inch thick, then cut it into small pieces, resembling noodles.
Cooking
  1. In a large pot of boiling salted water, gently drop the noodles in batches. Cook for about 3-4 minutes until they float to the surface, which signifies they are done. Remove with a slotted spoon and set aside.
  2. Toss with your favorite sauce or sauté with veggies for added flavor. Enjoy your comforting bowl of Easy Potato Noodles!

Notes

Adjust flour based on the moisture content of your potatoes. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. To reheat, add directly from the freezer into boiling water or sauté in a pan with a splash of water.
