Preparation

- In a mixing bowl, mash the cooled potatoes until smooth.

- Lightly flour your work surface and divide the dough into manageable portions. Roll each piece into a log about 1-inch thick, then cut it into small pieces, resembling noodles.
Cooking
- In a large pot of boiling salted water, gently drop the noodles in batches. Cook for about 3-4 minutes until they float to the surface, which signifies they are done. Remove with a slotted spoon and set aside.
