- In a mixing bowl, combine the powdered sugar, cocoa powder, sweetened condensed milk, and peppermint extract. Mix well until a thick, dough-like consistency forms.
- Take small portions of the mixture and roll them into small balls. Then, flatten each ball into a disc shape about 1/4 inch thick. Place the patties on a parchment-lined baking sheet.
- Refrigerate the shaped patties for about 30 minutes to firm them up.
- In a microwave-safe bowl, melt the semi-sweet chocolate chips with coconut oil, stopping to stir every 15 seconds until fully melted and smooth.
- Dip each chilled peppermint patty into the melted chocolate using a fork. Allow the excess chocolate to drip off, then return to the baking sheet.
