  1. In a mixing bowl, combine the peanut butter, powdered sugar, and vanilla extract. Use a spatula or your hands to mix until the ingredients are thoroughly combined and form a thick dough.
  2. Cover the bowl with plastic wrap or a clean kitchen towel, and refrigerate for about 15 minutes.
Shaping
  1. Once the mixture is chilled, take small portions (about 1 tablespoon) and roll them into small balls. Place them on a parchment-lined baking sheet.
Coating
  1. In a microwave-safe bowl, melt the chocolate chips in the microwave. Heat in intervals of 30 seconds, stirring in between until melted and smooth.
  2. Dip each peanut butter ball into the melted chocolate using a fork, allowing any excess chocolate to drip off. Then, return them to the baking sheet.
Final Touches
  1. If desired, quickly sprinkle your choice of toppings on each truffle before the chocolate sets.
  2. Place the coated truffles in the refrigerator for an additional 10 minutes to allow the chocolate to fully harden.
