Ingredients
  

For the Peach Filling
  • 4 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
For the Crumble Topping
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 0.5 cup brown sugar
  • 1 teaspoon cinnamon
  • 0.5 cup butter, melted

Method
 

Preparation
  1. In a mixing bowl, combine the sliced peaches with 1 cup of sugar and 1 tablespoon of lemon juice. Stir well and set aside.
  2. In a separate bowl, whisk together the flour, oats, brown sugar, and cinnamon. Gradually drizzle in the melted butter and mix until it resembles coarse crumbs.
Assembly
  1. Preheat your oven to 350°F (175°C). Grease or line a 9x13 inch baking pan with parchment paper.
  2. Press about two-thirds of the crumble mixture into the bottom of the prepared baking pan.
  3. Spread the peach mixture evenly over the crust and top with the remaining crumble mixture.
Baking
  1. Bake for about 30-35 minutes or until the top is golden brown and peaches are bubbling.
  2. Allow the bars to cool in the pan for at least 15 minutes before slicing into squares.

Notes

You can substitute fresh peaches with canned peaches in syrup, drained well. For a different flavor, swap granulated sugar for coconut sugar. Ensure butter is melted but not too hot before mixing it with dry ingredients. To avoid soggy bars, drain excess juice from peaches.
