Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, combine sliced peaches, 1/4 cup of sugar, and lemon juice. Toss to coat and set aside for about 10 minutes.
- In another bowl, whisk together the flour, remaining sugar, baking powder, and salt. Then add in the milk, melted butter, and vanilla extract, stirring until just combined.
- Pour the batter into a 9x13-inch baking dish without stirring. Top evenly with the peach mixture, allowing the juices to drip onto the batter.
Baking
- Place in the preheated oven and bake for 30 to 35 minutes, or until golden brown and bubbly.
- Let it cool slightly before serving.
Serving
- Top with vanilla ice cream for an extra treat!
Notes
To store, allow to cool completely before covering. Stays fresh in the refrigerator for up to 3 days. Freeze leftovers in an airtight container for up to 2 months. Reheat at 350°F for about 15-20 minutes.
