Ingredients
  

For the peach filling
  • 6 pieces fresh ripe peaches, peeled and sliced Choose ripe, flavorful peaches for the best taste.
  • 3/4 cup granulated sugar Divided into two parts: 1/4 cup for the filling and remaining for the batter.
  • 1 tablespoon lemon juice Enhances flavor of peaches.
For the batter
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Ground cinnamon (optional, for sprinkling) Can add for extra flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine sliced peaches, 1/4 cup of sugar, and lemon juice. Toss to coat and set aside for about 10 minutes.
  3. In another bowl, whisk together the flour, remaining sugar, baking powder, and salt. Then add in the milk, melted butter, and vanilla extract, stirring until just combined.
  4. Pour the batter into a 9x13-inch baking dish without stirring. Top evenly with the peach mixture, allowing the juices to drip onto the batter.
Baking
  1. Place in the preheated oven and bake for 30 to 35 minutes, or until golden brown and bubbly.
  2. Let it cool slightly before serving.
Serving
  1. Top with vanilla ice cream for an extra treat!

Notes

To store, allow to cool completely before covering. Stays fresh in the refrigerator for up to 3 days. Freeze leftovers in an airtight container for up to 2 months. Reheat at 350°F for about 15-20 minutes.
