Fruity Filling
  • 4 cups fresh or frozen peaches (sliced) Use fresh if available, otherwise, frozen works well.
  • 2 cups fresh or frozen raspberries Thaw frozen berries and drain excess moisture.
  • 1 cup granulated sugar Use less if the fruit is very sweet.
  • 1 tablespoon lemon juice Adds brightness to the fruit mixture.
Batter
  • 1 cup all-purpose flour
  • 1 cup milk Use whole milk for a richer flavor.
  • 1/2 cup unsalted butter (melted) Ensure butter is melted but not hot.
  • 2 teaspoons baking powder Helps the batter rise.
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional) For added warmth and spice.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peaches, raspberries, 1/2 cup sugar, and lemon juice. Gently toss to combine, and then set aside.
  3. In another bowl, whisk together flour, remaining sugar, baking powder, salt, and cinnamon.
  4. Stir in the milk until the batter is smooth. Then, mix in the melted butter to create a rich, buttery batter.
  5. Spray a baking dish with cooking spray or grease it with butter.
  6. Pour the batter into the prepared dish and spread it evenly.
  7. Spoon the fruit mixture over the batter. Do not stir!
Baking
  1. Bake for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the batter comes out clean.
  2. Let it cool slightly before serving.

Notes

Pair with a scoop of vanilla ice cream or a dollop of whipped cream. Store leftovers in an airtight container for up to three days, or freeze for up to three months. Reheat before serving.
