Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine peaches, raspberries, 1/2 cup sugar, and lemon juice. Gently toss to combine, and then set aside.
- In another bowl, whisk together flour, remaining sugar, baking powder, salt, and cinnamon.
- Stir in the milk until the batter is smooth. Then, mix in the melted butter to create a rich, buttery batter.
- Spray a baking dish with cooking spray or grease it with butter.
- Pour the batter into the prepared dish and spread it evenly.
- Spoon the fruit mixture over the batter. Do not stir!
Baking
- Bake for 30-35 minutes, or until the topping is golden brown and a toothpick inserted into the batter comes out clean.
- Let it cool slightly before serving.
Notes
Pair with a scoop of vanilla ice cream or a dollop of whipped cream. Store leftovers in an airtight container for up to three days, or freeze for up to three months. Reheat before serving.
