Preparation
- Begin by washing and trimming the ends of the zucchinis. Slice each zucchini into evenly shaped fries, about 1/4 inch thick.
Breading Station
- In one bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. In another bowl, keep some water handy to help the breadcrumb mixture stick to the zucchini.
Coating
- Dip each zucchini strip in the water, then roll it in the breadcrumb mixture. Ensure each fry is well-coated.
Baking
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Arrange the coated zucchini fries on the sheet in a single layer. Lightly spray them with olive oil.
- Bake for 20-25 minutes or until they are golden and crispy, flipping them halfway through for even cooking.
- Serve hot with your favorite dipping sauce.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for 5-7 minutes at 350°F or in the oven at 375°F for about 10 minutes. Avoid overcrowding the baking sheet to keep fries crispy.
