  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Begin by washing and trimming the ends of the zucchinis. Slice each zucchini into evenly shaped fries, about 1/4 inch thick.
Breading Station
  1. In one bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. In another bowl, keep some water handy to help the breadcrumb mixture stick to the zucchini.
Coating
  1. Dip each zucchini strip in the water, then roll it in the breadcrumb mixture. Ensure each fry is well-coated.
Baking
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Arrange the coated zucchini fries on the sheet in a single layer. Lightly spray them with olive oil.
  2. Bake for 20-25 minutes or until they are golden and crispy, flipping them halfway through for even cooking.
  3. Serve hot with your favorite dipping sauce.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for 5-7 minutes at 350°F or in the oven at 375°F for about 10 minutes. Avoid overcrowding the baking sheet to keep fries crispy.
