Preparation
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and sugar until well combined.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix—it’s okay if there are a few lumps!
- If desired, gently fold in chocolate chips or berries to the batter.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Baking
- Place the tin in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack. Serve them warm or at room temperature, topped with a drizzle of honey or maple syrup if desired!
Notes
Store muffins in an airtight container at room temperature for up to 3 days. For longer storage, freeze for up to 3 months. Reheat in the microwave for 20-30 seconds or in a toaster oven.
