  • 2 packs instant ramen noodles
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped
  • 2 pieces green onions, chopped For garnish

Preparation
  1. In a large pot, pour in your vegetable broth. Set it over medium heat and bring it to a gentle boil.
  2. Once the broth is bubbling, add the miso paste and stir until it dissolves, creating a lovely, rich base.
  3. Toss in the instant ramen noodles, giving them a gentle stir so they don't stick together.
  4. Pour in the soy sauce and sesame oil. If you love heat, this is the right moment to add chili paste! Stir gently to combine.
  5. Add the sliced mushrooms and chopped bok choy. Cook for about 3-5 minutes, until the bok choy is tender and the mushrooms have softened nicely.
  6. If you’ve chosen tofu or chicken, add it now and let it simmer for another 3-5 minutes to heat through.
  7. Once everything is cooked and heated through, ladle the ramen into bowls and top with chopped green onions.
