Main Ingredients
  • 2 cups rice Any type of white rice
  • 4 cups vegetable broth or water For cooking the rice
  • 1 can diced tomatoes Drained before use
  • 1 cup mixed vegetables Can use fresh or frozen
  • 1 medium onion, chopped For flavor
  • 2 cloves garlic, minced For flavor
  • Salt and pepper to taste For seasoning
  • Optional: protein of choice Like chicken or beans for a boost

Method
 

Preparation
  1. Gather all your ingredients. Chop the onion and mince the garlic. If using fresh mixed veggies, wash and chop them.
Cooking
  1. Add the rice, vegetable broth (or water), diced tomatoes, mixed veggies, chopped onion, and minced garlic to the rice cooker.
  2. Sprinkle salt and pepper over the mixture. If adding protein, toss it in now.
  3. Close the rice cooker lid and turn it on. Select the cooking setting based on your rice cooker instructions. This will usually take about 20-25 minutes.
  4. Once the cooking cycle is complete, let the rice sit for 5 minutes before opening the lid. Fluff the rice with a fork.
  5. Ladle servings into bowls, add your favorite toppings, and enjoy.

Notes

Try using frozen corn or peas as vegetable substitutes. Ensure not to leave the lid open while cooking to avoid uneven rice. Store leftovers in an airtight container and refrigerate for up to 3-4 days or freeze for up to a month.
