  • 1 lb chicken breasts, cubed Use halal chicken broth for a halal-friendly dish.
  • 1 cup rice (long-grain or basmati)
  • 2 cups chicken broth Make sure it's halal!
  • 1 cup mixed vegetables (peas, carrots, corn) Feel free to substitute for other vegetables.
  • 1 unit onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Start by gathering all your ingredients and chopping your onion and garlic. Cube your chicken breasts and set them aside.
Cooking
  1. In a large skillet or casserole dish over medium heat, add the olive oil. Once heated, add the diced onion and minced garlic. Sauté for about 2-3 minutes, or until the onion becomes translucent.
  2. Add the cubed chicken to the pan, seasoning it with salt, pepper, and paprika. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink.
  3. Stir in the rice, followed by the chicken broth. Bring this mixture to a gentle boil.
  4. Once boiling, gently fold in the mixed vegetables.
  5. Reduce the heat to low and cover the pan. Let it simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. Remove from heat, fluff with a fork, and let it rest for a few minutes. Serve warm, garnished with fresh herbs if desired.

Notes

You can store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze it in a freezer-safe container for up to 3 months. Reheat in the oven at 350°F (175°C) or microwave individual portions with a splash of chicken broth.
