  • 1 cup all-purpose flour or gluten-free flour blend for gluten-free option
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, melt the butter and mix it with brown sugar until combined. Spread at the bottom of a greased 9-inch round cake pan.
  3. Layer the sliced fruit evenly over the butter-sugar mixture.
Batter Preparation
  1. In the same bowl, add granulated sugar, milk, vegetable oil, and eggs. Mix until well blended.
  2. Sift in flour, baking powder, salt, and vanilla extract. Stir until just mixed—do not overmix.
  3. Carefully pour the batter over the fruit layer in the cake pan.
Baking
  1. Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool for about 10 minutes, then carefully invert onto a serving plate.

Notes

Use ripe fruit for best flavor. Feel free to experiment with different fruit combinations or add spices like cinnamon.
