Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix the diced plums with 2 tablespoons of sugar and 1 tablespoon of lemon juice, and let it sit.
- In a large bowl, combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt.
- Pour the melted butter over the dry mixture and stir until combined.
- Lightly grease a 9x9-inch baking pan and press half of the oat mixture into the bottom.
- Spread the plum mixture evenly over the crust.
- Crumble the remaining oat mixture over the plums.
Baking
- Place the pan in the preheated oven and bake for 30-35 minutes or until the top is golden brown.
- Allow to cool in the pan for about 15 minutes before slicing into squares.
Notes
Store in an airtight container at room temperature for up to 3 days, in the refrigerator for a week, or freeze individual bars for up to 3 months. Reheat in the oven at 300°F (150°C) for about 10 minutes.
