Ingredients
  

For the crust
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted Ensure it is melted for easy mixing.
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
For the filling
  • 2 cups fresh or frozen plums, diced If using frozen, thaw before dicing.
  • 2 tablespoons sugar (for plums)
  • 1 tablespoon lemon juice Freshly squeezed is preferred.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the diced plums with 2 tablespoons of sugar and 1 tablespoon of lemon juice, and let it sit.
  3. In a large bowl, combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt.
  4. Pour the melted butter over the dry mixture and stir until combined.
  5. Lightly grease a 9x9-inch baking pan and press half of the oat mixture into the bottom.
  6. Spread the plum mixture evenly over the crust.
  7. Crumble the remaining oat mixture over the plums.
Baking
  1. Place the pan in the preheated oven and bake for 30-35 minutes or until the top is golden brown.
  2. Allow to cool in the pan for about 15 minutes before slicing into squares.

Notes

Store in an airtight container at room temperature for up to 3 days, in the refrigerator for a week, or freeze individual bars for up to 3 months. Reheat in the oven at 300°F (150°C) for about 10 minutes.
