  • 1 cup peanut butter smooth or crunchy, your choice!
  • 1/2 cup honey
  • 1 cup rolled oats
  • 1/2 cup chocolate chips
  • 1/2 teaspoon vanilla extract

  1. Grease a 9x9 inch pan with a little oil or line it with parchment paper for easy removal later.
  2. In a large mixing bowl, combine the peanut butter and honey. Stir until well blended.
  3. Gently fold in the rolled oats and the vanilla extract until the oats are evenly coated.
  4. Add the chocolate chips last, and stir just until evenly distributed throughout the mixture.
  5. Pour the mixture into the prepared pan. Using a spatula, press the mixture down firmly into an even layer.
  6. Place the pan in the refrigerator for at least 2 hours to firm up the bars.
  7. Once set, remove the bars from the pan. Cut them into squares or rectangles, and enjoy!

Notes

To keep bars fresh, store in an airtight container in the refrigerator for up to one week or freeze for about 3 months. Warm in the microwave for 10-15 seconds if desired. For alternatives, use almond butter or sunflower seed butter if allergic to peanuts. Ensure to press the mixture firmly to avoid crumbly bars.
