Ingredients
  

  • 8 oz cream cheese softened
  • 1/3 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup heavy whipping cream
  • **Coating and Toppings:**
  • 1 cup crushed graham crackers or cookie crumbs
  • 1/2 cup melted chocolate optional, for drizzling or dipping

Instructions
 

  • **Make the Cheesecake Mixture:** In a mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the vanilla extract and mix well.
  • **Whip the Cream:** In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.
  • **Chill the Mixture:** Cover the bowl and refrigerate the cheesecake mixture for at least 1 hour to firm up.
  • **Form the Bites:** Once chilled, use a small cookie scoop or spoon to scoop out portions of the mixture. Roll each portion into a ball with your hands.
  • **Coat the Bites:** Roll the cheesecake balls in crushed graham crackers or cookie crumbs until fully coated.
  • **Optional Decoration:** Drizzle melted chocolate over the bites or dip them partially for an extra touch of sweetness.
  • **Chill Again:** Place the coated bites on a parchment-lined tray and refrigerate for 1-2 hours until firm.
  • **Serve:** Serve chilled and enjoy!
