  • 2-3 bananas ripe bananas (mashed) The riper the bananas, the more flavor they'll impart.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda Helps the bread rise.
  • pinch salt
  • 3/4 cup sugar Brown sugar can be substituted for extra flavor.
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Do not overmix when adding.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until smooth, leaving a few lumps for character.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and a pinch of salt until well incorporated.
  5. Add in the sugar, beaten egg, and vanilla extract, stirring until combined.
  6. Gently fold in the flour until just incorporated.
  7. Pour the mixture into a greased loaf pan, spreading it evenly.
Baking
  1. Bake in the preheated oven for 55-60 minutes. Check with a toothpick; if it comes out clean, the bread is done.
  2. Remove the loaf from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Serve warm with butter, honey, or whipped cream. Pair with coffee or tea for an excellent breakfast or snack. For a twist, try adding nuts or chocolate chips.
