Preparation
- Preheat your oven to 400°F (200°C).
- Heat a drizzle of olive oil in a skillet over medium heat. Add the diced onions and minced garlic, and cook until softened, about 3-4 minutes.
- Add the ground beef or lamb to the skillet and cook until browned, breaking it apart with a wooden spoon.
- Stir in the frozen mixed vegetables and cook for another 3 minutes.
- Pour in the beef broth and Worcestershire sauce. Let it simmer for about 5-7 minutes, allowing the mixture to thicken slightly. Season with salt and pepper to taste.
- Spoon the meat mixture into individual ramekins or a muffin tin.
- Generously layer the mashed potatoes on top of the filling, creating a beautiful, rustic look. Use a fork to create texture on the surface.
- Place the pies in the preheated oven and bake for 20 minutes, or until the tops are golden and crispy.
- Let them cool for a few minutes before serving.
Notes
For vegetarian or vegan options, substitute lentils or mushrooms for meat and use plant-based mashed potatoes. Keep an eye on the pies while baking to achieve a perfect golden brown top.
