  • 1 cup cream cheese, softened
  • 1 cup sour cream
Mix-Ins
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup chopped cilantro
Seasoning
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder

  1. In a mixing bowl, combine the softened cream cheese and sour cream. Use a hand mixer or a sturdy spatula to blend until smooth and creamy.
  2. Once your base is ready, fold in the drained corn, shredded cheddar cheese, diced red onion, diced bell pepper, and chopped cilantro. Stir until well combined.
  3. Add lime juice, chili powder, and salt and pepper. Taste as you go, ensuring you get that zesty flavor.
  4. If you have time, let the dip chill in the fridge for about 30 minutes before serving.
  5. Serve with tortilla chips and enjoy!

Notes

For added flavor, prepare the dip ahead of time and allow it to sit. Store leftovers in an airtight container in the fridge for 3 to 5 days. Reheat in 30-second increments in the microwave.
