Preparation
- In a large mixing bowl, combine the mashed potatoes, flour, baking powder, and salt. Mix until the ingredients start to merge.
- Drizzle in olive oil and begin adding water gradually. Stir until you have a smooth dough that’s not too sticky.
- Turn the dough onto a floured surface. Gently knead until it becomes smooth, about 2-3 minutes. Add more flour if it feels sticky.
- Divide the dough into smaller balls (about the size of a golf ball). Roll each ball out to about 1/4 inch thickness.
- Heat a non-stick skillet over medium heat. Cook each flatbread for 2-3 minutes on each side, or until golden brown. Optionally, add a little olive oil for flavor.
- Once cooked, place your flatbreads on a plate and cover them with a clean kitchen towel to keep warm while you cook the rest.
Notes
Let your flatbread cool to room temperature before storing in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 3 months. Reheat in a skillet over medium heat for 1-2 minutes each side or in the oven wrapped in foil at 350°F until warmed through.
