For the Salmon
  • 4 pieces salmon fillets (about 6 oz each) Choose wild-caught for best flavor.
  • 3 tablespoons olive oil Extra virgin recommended.
  • 4 cloves garlic, minced Freshly minced for best flavor.
  • 1 each juice of 1 lemon Freshly squeezed.
  • 1 each zest of 1 lemon Use a microplane for best results.
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper Season to taste.
  • for garnish fresh parsley Chopped.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, dried basil, and oregano. Season with salt and pepper to taste.
  3. Place the salmon fillets in a baking dish and pour the marinade over them, ensuring they are well-coated. Allow them to marinate for about 15 minutes.
Cooking
  1. Transfer the baking dish to the preheated oven and bake the salmon for 12-15 minutes, or until it’s cooked through and flakes easily with a fork.
  2. Once ready, remove the dish from the oven, garnish with fresh parsley, and serve with your choice of sides.

Notes

For a complete meal, pair with garlic mashed potatoes, a refreshing green salad, or roasted vegetables. A crisp white wine like Sauvignon Blanc complements this dish well.
