  • 1 pound cooked sausage (crumbled)
  • 2 cups pancake mix
  • 2 cups milk
  • 4 large eggs
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together pancake mix, milk, eggs, sugar, vanilla extract, and baking powder until smooth.
  3. In a greased 9x13 inch baking dish, spread the crumbled sausage evenly across the bottom.
  4. Pour the pancake mix over the sausage, ensuring it covers the sausage completely.
  5. If you’d like to add blueberries or chocolate chips, now’s the time to sprinkle them over the top!
Baking
  1. Place the baking dish in the oven and bake for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  2. Allow the casserole to cool slightly before serving, and drizzle with syrup if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to four days. For long-term storage, freeze portions wrapped tightly. Reheat in the oven at 350°F (175°C).
