  • 1 cup milk Keeps muffins moist.
  • 0.25 cups olive oil Adds richness.

Pizza Ingredients
  • 1 cup pizza sauce Flavorful base.
  • 1 cup shredded mozzarella cheese Melts to perfection.
  • 0.5 cups diced halal pepperoni Can swap for other toppings.
  • 0.5 cups chopped bell peppers Add color and crunch.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin by lightly greasing it or lining it with muffin papers.
  2. In a large bowl, whisk together flour, baking powder, salt, and garlic powder.
  3. In a separate bowl, combine milk, olive oil, and egg, then beat together until smooth.
  4. Gradually pour the wet mixture into the dry mixture, stirring gently until just combined.
  5. Fold in pizza sauce, mozzarella cheese, pepperoni, and chopped bell peppers.
  6. Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until the tops are golden brown and a toothpick inserted comes out clean.
  2. Allow cooling for a few minutes in the pan before transferring to a wire rack.

Notes

Store in an airtight container in the refrigerator for up to one week or freeze for up to three months. Reheat in the microwave for 30-60 seconds or at 350°F (175°C) until warmed through.
