- Preheat your oven to 350°F (175°C) and lightly grease a medium loaf pan or line it with parchment paper for easy removal.
- Cook the lentils: Rinse 1 cup of lentils under cold water and cook according to package instructions until tender, about 20-25 minutes. Drain any excess liquid.
- Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
- Combine the ingredients: In a large mixing bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, oregano, thyme, soy sauce, and ketchup. Mix until well combined. Season with salt and pepper to taste.
- Shape the loaf: Transfer the mixture into the prepared loaf pan, pressing down firmly to shape it into a loaf. Spread extra ketchup on top for added flavor.
- Bake: Cover the loaf with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until golden and firm.
- Cool and serve: Let the loaf cool for 5-10 minutes before slicing. Serve warm with your favorite sides.

For perfect results, use brown or green lentils as they hold their shape better. To ensure a moist loaf, consider adding vegetable broth if the mixture feels dry. Customize spices to your taste; smoked paprika can add exciting depth.
