  • 1 cup breadcrumbs (preferably whole wheat)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1 stalk celery, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons ketchup (plus extra for topping)
  • 1 tablespoon olive oil

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a medium loaf pan or line it with parchment paper for easy removal.
  2. Cook the lentils: Rinse 1 cup of lentils under cold water and cook according to package instructions until tender, about 20-25 minutes. Drain any excess liquid.
  3. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Sauté until the vegetables are soft, about 5-7 minutes.
  4. Combine the ingredients: In a large mixing bowl, combine the cooked lentils, sautéed vegetables, breadcrumbs, oregano, thyme, soy sauce, and ketchup. Mix until well combined. Season with salt and pepper to taste.
  5. Shape the loaf: Transfer the mixture into the prepared loaf pan, pressing down firmly to shape it into a loaf. Spread extra ketchup on top for added flavor.
  6. Bake: Cover the loaf with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until golden and firm.
  7. Cool and serve: Let the loaf cool for 5-10 minutes before slicing. Serve warm with your favorite sides.

Notes

For perfect results, use brown or green lentils as they hold their shape better. To ensure a moist loaf, consider adding vegetable broth if the mixture feels dry. Customize spices to your taste; smoked paprika can add exciting depth.
