Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set it aside.
- In a large mixing bowl, beat the softened butter and sugar together with an electric mixer until light and fluffy.
- Beat in the eggs one at a time, followed by the lemon juice and lemon zest. Mix until well combined.
- Gradually fold the dry ingredients into the wet mixture until just blended—avoid overmixing!
Baking
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
