  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 0.5 cups unsalted butter, softened
  • 2 large eggs
  • 0.33 cups freshly squeezed lemon juice
  • 1 count lemon, zest Zest of 1 lemon

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set it aside.
  3. In a large mixing bowl, beat the softened butter and sugar together with an electric mixer until light and fluffy.
  4. Beat in the eggs one at a time, followed by the lemon juice and lemon zest. Mix until well combined.
  5. Gradually fold the dry ingredients into the wet mixture until just blended—avoid overmixing!
Baking
  1. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

For best flavor, use fresh lemon juice and zest. Don't overmix the batter to ensure a light, fluffy loaf. Check for doneness around 45 minutes as ovens vary.
