Ingredients
  

For the lemon curd
  • 1 cup lemon juice (freshly squeezed) Freshly squeezed for best flavor.
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup unsalted butter
  • 1 teaspoon lemon zest
For the tartlet shells
  • 1 package pre-made tartlet shells Ensure they are halal-compliant.

Preparation
  1. Gather all ingredients and measure the lemon juice and zest accurately.
Make the Lemon Curd
  1. In a medium saucepan, whisk together the granulated sugar and eggs until smooth.
  2. Slowly add in the lemon juice and zest, whisking until fully combined.
  3. Over medium heat, add the unsalted butter to the mixture and stir constantly for about 10 minutes until the curd thickens.
  4. Remove the saucepan from heat and allow the lemon curd to cool for about 10 minutes.
Assemble Tartlets
  1. Spoon the cooled lemon curd into the pre-made tartlet shells, filling them generously.
  2. Chill the filled tartlets in the refrigerator for at least 30 minutes.
Serve
  1. Top with fresh berries or whipped cream and enjoy!

Notes

For best flavor, use fresh lemons instead of bottled juice. Store lemon curd separately from tartlet shells to maintain crispness. Can add lavender or vanilla extract for variation. Best enjoyed fresh but can be stored in the refrigerator for up to three days.
