- Gather all ingredients and measure the lemon juice and zest accurately.
Make the Lemon Curd
- In a medium saucepan, whisk together the granulated sugar and eggs until smooth.

- Over medium heat, add the unsalted butter to the mixture and stir constantly for about 10 minutes until the curd thickens.
- Remove the saucepan from heat and allow the lemon curd to cool for about 10 minutes.
Assemble Tartlets
- Spoon the cooled lemon curd into the pre-made tartlet shells, filling them generously.
- Chill the filled tartlets in the refrigerator for at least 30 minutes.

Notes
