Preparation
- Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.
- In a bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well-coated and resemble wet sand. Press this mixture firmly into the bottom of your prepared baking dish to form the crust.
- In a large mixing bowl, whisk together the brown sugar, flour, and salt. Stir in the egg and vanilla extract until smooth. Fold in the remaining chocolate chips.
- Spoon the cookie batter over the graham cracker crust, spreading it evenly. Top with the mini marshmallows.
Baking
- Place the dish in the preheated oven and bake for 25 minutes or until the edges are golden and the marshmallows are slightly toasted.
- Allow the bars to cool in the pan for at least 10 minutes. Lift the bars out using the parchment overhang and slice into squares.
Notes
For graham cracker substitutions, use crushed digestive biscuits or vanilla wafer cookies. To avoid over-baking, keep an eye on the marshmallows while they bake. Cool in the refrigerator for easier cutting.
