Ingredients
  

For the soup base
  • 1 pound ground beef or halal Italian sausage Choose halal options for dietary needs.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 4 cups chicken or vegetable broth
For the lasagna elements
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
For seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • to taste Fresh parsley, chopped (for garnish)

Method
 

Cooking the Soup
  1. In a large pot over medium heat, add the ground beef or halal sausage. Cook until browned, breaking it apart as it cooks for about 5-7 minutes.
  2. Add the chopped onion and minced garlic. Sauté until the onion is translucent, around 3-4 minutes.
  3. Stir in the crushed tomatoes, then pour in the chicken or vegetable broth. Allow it to simmer for about 10 minutes to blend the flavors.
  4. Break the lasagna noodles into smaller pieces and stir them into the pot. Cook for about 10-12 minutes, or until the noodles are tender.
  5. Reduce the heat and stir in the ricotta and half of the mozzarella cheese, stirring until it's melted and combined. Season with basil, oregano, salt, and pepper to taste.
  6. Ladle the soup into bowls and top with the remaining mozzarella and a sprinkle of fresh parsley for garnish.

Notes

For extra flavor, you can add vegetables like spinach or mushrooms. Monitor the cooking times of the noodles to ensure they are al dente. If you have time, let the soup simmer longer to meld the flavors.
