  • 1 pound kielbasa sausage, sliced into rounds
  • 3 cups baby potatoes, halved
  • 2 large bell peppers, sliced (any color)
  • 1 large onion, sliced
Seasoning and Oil
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper.
  3. Arrange halved baby potatoes, sliced bell peppers, sliced onion, and kielbasa rounds on the prepared baking sheet.
  4. Drizzle with olive oil, sprinkle garlic powder, smoked paprika, salt, and pepper. Toss to combine.
Cooking
  1. Roast in the oven for 25-30 minutes, stirring halfway through.
  2. Check for doneness; potatoes should be tender and sausage browned.
  3. Plate and serve hot.

Notes

Customize your veggies as desired—zucchini, carrots, or broccoli work great! Ensure even spacing on the baking sheet for best results. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
