Ingredients
  

For the Carrots
  • 2 pounds fresh carrots, peeled and cut into uniform sticks Make sure your carrots are fresh and vibrant for the best flavor!
  • 1/4 cup brown sugar, packed Alternatively, use maple syrup for a different flavor.
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons unsalted butter Add small pats over the carrots before roasting.

Preparation
  1. Preheat your oven to 425°F (220°C) for optimal caramelization.
  2. Peel the carrots and slice them into uniform sticks, aiming for about 3 to 4 inches in length.
  3. In a large mixing bowl, combine the brown sugar, olive oil, salt, and black pepper. Stir well until blended.
  4. Add the carrot sticks to the bowl and toss until they are fully coated with the brown sugar mixture.
  5. Spread the coated carrots in a single layer on a parchment-lined baking sheet, ensuring they are not crowded.
  6. Place small pats of butter evenly over the carrots.
Cooking
  1. Roast the carrots in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden brown and fork-tender.
  2. Remove from the oven and serve warm for the best flavor.

Notes

If preparing ahead, you can coat the carrots the day before and refrigerate them until ready to roast. Store leftovers in an airtight container for up to 4 days.
