Method
 

Preparation
  1. Peel the potatoes and cut them into quarters. Place them in a pot of salted water and bring to a boil.
  2. Reduce the heat and simmer the potatoes for about 15-20 minutes, or until they are fork-tender, then drain and cool slightly.
  3. Mash the potatoes until smooth, ensuring there are no lumps.
  4. Add the flour, egg, salt, and pepper to the mashed potatoes and mix until a dough forms, adding water as needed.
Cooking
  1. Sprinkle flour on the countertop, turn the dough out, and divide it into small portions. Roll each into thin logs and cut them into bite-sized pieces.
  2. Boil a large pot of salted water, drop the cut noodles in, and cook until they float to the top (about 3–5 minutes).
  3. Remove the noodles with a slotted spoon and transfer them to a plate.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to a month. Reheat in a pan with olive oil or butter.
