Preparation
- Peel the potatoes and cut them into quarters. Place them in a pot of salted water and bring to a boil.
- Reduce the heat and simmer the potatoes for about 15-20 minutes, or until they are fork-tender, then drain and cool slightly.
- Mash the potatoes until smooth, ensuring there are no lumps.
- Add the flour, egg, salt, and pepper to the mashed potatoes and mix until a dough forms, adding water as needed.
Cooking
- Sprinkle flour on the countertop, turn the dough out, and divide it into small portions. Roll each into thin logs and cut them into bite-sized pieces.
- Boil a large pot of salted water, drop the cut noodles in, and cook until they float to the top (about 3–5 minutes).
- Remove the noodles with a slotted spoon and transfer them to a plate.
