Easy Hamburger Rice Casserole

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain rice
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • #### For the Topping
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped parsley (optional, for garnish)

Ingredients
  

  • **Preheat the Oven:**
  • Preheat your oven to 375°F 190°C.
  • **Cook the Beef:**
  • In a large skillet cook the ground beef and diced onion over medium heat until the beef is browned and the onion is softened. Drain any excess grease.
  • **Add Garlic and Seasoning:**
  • Stir in the minced garlic paprika, salt, and black pepper. Cook for 1 minute until fragrant.
  • **Combine Ingredients:**
  • In a mixing bowl combine the uncooked rice, beef broth, cream of mushroom soup, and sour cream. Mix well.
  • **Assemble the Casserole:**
  • Spread the cooked beef mixture evenly in the bottom of a greased 9x13-inch baking dish. Pour the rice mixture over the beef and stir gently to combine.
  • **Bake:**
  • Cover the dish tightly with aluminum foil and bake for 40-45 minutes or until the rice is tender and the liquid is absorbed.
