Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs Use room temperature eggs.
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips (semi-sweet or milk chocolate)
For the Filling
  • 12 cookies Oreo cookies (regular or Halloween-themed) Use regular or Halloween-themed Oreos for a festive touch.

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes with an electric mixer).
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips gently.
  6. Using a cookie scoop or tablespoon, take a portion of the dough, flatten it in your hand, and place an Oreo in the center. Wrap the dough around the Oreo completely.
  7. Place the stuffed cookies on the prepared baking sheet with enough space in between.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. The centers may look slightly underbaked.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or freeze for 2-3 months. Reheat in the microwave before serving.
